How it started
The
idea
to
start
the
business
is
inspired
by
my
daughter.
One
day
I
picked
her
up
from
school
and
she
asked
me
to
create
her
own
signature
spice
rub,
named
after
her.
That
same
day
we
created
’Zoe’s
Spice
Rub’.
We
had
so
much
fun
and
she’s
so
proud to have her own spice blend.
I
started
cooking
and
experimenting
with
herbs
and
spices
as
a
teenager,
inspired
by
my
parents,
that
had
a
lot
of
friends
from
foreign
countries
and
cultures
so
I
was
exposed
to
varied
cuisines
from
all
over
the
world.
So
I
collected
a
lot
of
authentic
recipes
from
them
and
I’m
still
collecting
authentic
recipes
whenever
I’m
travelling
or
just
have
good
food
in
a
fancy
restaurant
or
from
a
food vendor on the street.
Spice Specifics
Spices
provide
flavour,
aroma,
color
and
texture
and
each
spice
has
specific
chemical
compounds
that
create
these
sensual
qualities.
The
identifiable
sensory
characteristics
are:
cooling,
warm,
spicy,
fruity,
earthy,
floral,
woody,
herbaceous,
nutty,
piney,
pungent
and
sulfury.
Usually
spices
don’t
just
have
one
single
flavour
profile. Thyme for example adds floral, herbaceous, bitter and piney notes while Cumin adds hearty, earthy and warm notes.
My phylosophy
The
philosophy
of
marc’s
spice
mixtures
is
to
only
use
fresh,
high
quality
organic
ingredients
and
omitting
flavor
enhancers
and
anticaking
agents.
Until
a
recipe
makes
it
to
a
new
product
it
takes
quite
some
time.
There’s
a
period
of
tasting,
reinventing,
assembling
and
rethinking,
over
and
over.
I
hope
to
bring
a
lot
of
joy
and
fun into your kitchen with new aromas and flavors.
