Coffee Crusted Skirt Steak
preparation: 60 min.
Ingredients for 4 servings:
2 lb skirt steaks
2 tbsp extra-virgin olive oil
1 bunch fresh cilantro
woodchips of your choice
cognac based bbq sauce
Marc’s Barista Coffee Rub
Utensils:
barbecue grill, plate, refrigerator, knife
Directions:
Arrange
the
steaks
on
a
plate
and
sprinkle
with
3
tablespoons
Barista
Coffee
Rub
on
both
sides.
Massage
the
rub
into
the
meat.
Drizzle
the
steaks
on
both
sides
with
the
olive
oil
and
marinate
in
the
refrigerator
for
one
hour.
Chop
the
cilantro.
Preheat
the
barbecue
grill,
oil
the
grill
grate.
Fill
a
smoke
box
with
the
wood
chips
and
put
on direct heat.
Arrange
the
steaks
on
the
grate
and
grill
4
minutes
on
each
side
for
medium-rare.
Take
the
steaks
off
the
grill
and
let
rest
for
5
Minutes.
Brush
the
steaks
with
some
bbq-sauce, sprinkle with the cilantro and serve with some extra sauce.

rub
creates
a
whole
new
flavor
pallet
to
your
barbecued
meats.
I
created
this
rub
long
time
ago
after
having
beef
tenderloin
with
coffee-cognac-
green
pepper-sauce
at
a
restaurant
in
France,
close
to
the
Mont
Saint
Michel
located
at
the
border
of
Normandy
and
Bretagne.
I
loved
the
sauce
so
much
that
I
created a dry rub version for barbecuing.
