Doro Wot (Ethiopian national dish)
preparation: 2 ½ hours
Ingredients for 4 servings:
26 oz chicken thighs
2 tbsp lemon juice
5 tbsp butter
2 tbsp olive oil
3 cups chopped onion
1 tbsp chopped garlic
1 tbsp chopped ginger
¼ cup Marc’s Berbere Spice Mix
½ cup white wine
1 tbsp honey
1 cup chicken stock
4 hard cooked eggs
Utensils:
large pot, knife
Directions:
Peel the eggs and prick with a fork. Cut the meat into bite-size peaces. In a bowl mix the meat with the lemon juice and marinate for 30 minutes. Heat 2 tablespoons
of butter in a pot, add the olive oil and the onion and cook for 45 minutes, covered. Stir occasionally. Add Ginger and Garlic with 1 tablespoon of butter, cover the pot
and cook for 30 more minutes. Add the meat, wine, stock and honey, cover and cook for 45 minutes, stir occasionally. Add the eggs and cook for 15 more minutes.
