Jerk Chicken
preparation: 30 min. + overnight marinating
Ingredients for 4 servings:
1 whole chicken
1 oz soy sauce
1 oz lime juice
1 oz vegetable oil
2 oz white vinegar
1 oz orange juice
Marc’s Jamaican Jerk Spice Mix
Utensils:
sharp knife, large bowl or resealable bag, barbecue grill or oven
Directions:
Cut
the
chicken
into
eight
pieces
and
loosen
the
skin
of
the
pieces.
Combine
soy
sauce,
lime
juice,
vegetable
oil,
vinegar,
orange
juice
and
2
tbsp
of
Marc’s
Jamaican
Jerk Spice Mix and the chicken pieces in a bowl, marinate covered for a day in the refrigerator.
Preheat
a
barbecue
grill
to
medium
high
heat.
Remove
the
chicken
pieces
from
the
marinade
and
grill
for
10
minutes
on
each
side
until
juices
run
clear
when
the
meat is cut near the bone. Serve with lime wedges.

Jerk
is
a
style
of
cooking
native
to
Jamaica.
Meat
is
dry-rubbed
or
wet
marinated
with
a
hot
spice
mixture
called
Jamaican
jerk
spice.
It
is
then
slowly
cooked
over
a
smoking
wood
fire
or
in
a
wood
burning
oven.
The
meat
is
normally,
but
not
limited
to,
chicken
or
pork.
Jerk
cooking
is
popular
in
Carribean
West
Indian
communities
throughout America.
