The word Kofta is derived from the Persian word ’kufteh’,which means bruised. Kofta or Köfte can also be found in the entire oriental cuisine from North Afrika over South East Europe up to India. In Greece they are known as keftedes, in Germany as frikadellen. Description This is a mild and typical Persian spice mixture for skewered ground beef, lamb, pork or poultry meat. Uses Use this seasoning on beef, veal, lamb, pork, chicken and poultry. Kofta Kebab preparation: 30 min. + 2 hours marinating Ingredients for 4 servings: 1 lb ground beef (80/20) 1 onion 1 red bell pepper 1 green bell pepper 20 sherry tomatoes 1 tbsp canola oil Marc’s Kofta Kebab Spice Mix Utensils: sharp knife, bowl, skewers, barbecue grill, refrigerator, food processor Directions: Peel the onion and grate in a food processor. In a bowl mix the grated onion with the ground beef and 1,5 - 2 tablespoons of the spice mix. Knead with your hands until well combined. Form little oval shaped flat meat patties and spear each oval on a skewer. Cover the skewers with plastic foil and put in the refrigerator for at least 2 hours. Cut the bell peppers into bite-size squares and spear on skewers, alternating with the cocktail tomatoes. Grill the skewers for 3 to 4 minutes on both sides until done.
