The
meat

shape.
The
skewers
are
then
grilled
on
an
open
charcoal
grill.
It
is
then
served
with
rice
and
grilled
tomatoes
or
grilled
vegetable skewers.

Beef Koobideh Kebab
preparation: 15 min. + 1 hour marinating
Ingredients for 4 servings:
1 lb ground beef (80/20)
½ onion
2 tbsp breadcrumbs

Utensils:
sharp knife, wide metal skewers, large bowl, barbecue grill
Directions:
Mix
1
lb
ground
beef
(80/20)
with
1.5
to
2
tbsp
spice
mix,
1/2
onion
and
2
tbsp
breadcrumbs.
Refrigerate
for
1
hour,
put
the
mixture
around
wide
metal
skewers
and
flatten
the
mixture
with
your
fingers,
that
it
becomes
the
characteristic
wave
shape.
Preheat
a
charcoal
grill
and
grill
the
skewers
until
done.
Serve
with
grilled
tomatoes or vegetable skewers and chelo, Persian rice.
