Santa Maria Tri Tip
preparation: 30 min. + 4 hours marinating
Ingredients for 4 servings:
2 ½ lb tri tip roast
Marc’s Santa Maria Spice Mix
Utensils:
sharp knife, resealable bag, barbecue grill or pan
Directions:
Massage
3
tablespoons
into
2.5
lb
tri-tip,
cover
and
let
marinate
for
4
hours
in
the
refrigerator.
In
a
bowl
blend
some
vinegar,
sunflower
oil,
crushed
garlic
and
mustard.
Grill
the
tri-tip
on
a
hot
barbecue
grill
for
25
minutes,
turning
it
regularly
and
brushing
it
with
the
vinegar
mixture
every
5
minutes,
until
the
meat
is
crispy
on
the outside and pink on the inside. Let rest and slice thinly.
