Shish Kebab
preparation: 20 min. + 4 hours marinating
Ingredients for 4 servings:
2 lb boneless leg of lamb
1 red bell pepper
1 green bell pepper
2 red onions
2 fl oz olive oil
Marc’s Shish Kebab Spice Mix
Utensils:
sharp knife, medium bowl, barbecue grill
Directions:
Trim the meat and cut into 1 ¼ inch cubes. In a medium bowl mix 2 tablespoons of the spice mix with the olive oil. Add the meat cubes, stir well until the meat is
covered with the marinade. Seal and let marinate for 4 hours. Peel and cut the onions into wedges. Cut the bell peppers in half, lengthwise. Discard the white
membranes and seeds, cut the peppers into 1 ¼ inch squares. Thread the meat onto skewers, thread the vegetables onto separate skewers. Grill the skewers for 5
to 6 minutes, turning them frequently. Serve with pita bread and sauces of your choice.

Iskender Kebab
preparation: 20 min. + 4 hours marinating
Ingredients for 4 servings:
4 veal schnitzel
1 pita bread
1 cup buttermilk
¼ cup cream
½ cup yoghurt
5 tomatoes
3 cloves garlic
½ cup chopped parsley
Marc’s Shish Kebab Spice Mix
Utensils:
sharp knife, medium bowl, barbecue grill
Directions:
Cut
the
tomatoes
into
small
cubes.
In
a
pan
heat
one
tablespoon
olive
oil,
add
tomatoes
and
sauté
for
5
minutes.
Add
a
little
bit
spice
mix,
a
little
water
and
simmer
until sauce thickens.
Peel
and
dice
the
garlic.
In
a
bowl
mix
the
buttermilk,
cream
and
yoghurt
and
stir
until
well
combined.
Season
with
salt
and
garlic.
Cut
the
pita
bread
into
coarse
pieces
and
roast
in
a
pan
without
fat.
Wash
the
schnitzel,
tap
dry
and
cut
into
thin
stripes.
Season
the
meat
with
the
spice
mix
and
roast
in
a
pan
in
the
remaining
olive oil until crisp. Arrange the bread pieces on four plates, top with tomato sauce, meat and top with yoghurt sauce. Serve immediately.

Shish
Kebab
is
a
popular
meal
of
grilled
meat
skewers.
It
is
one
of
the
many
types
of
kebab,
originated
in
Turkey.
It
is
traditionally
made
of
lamb
but
there
are
various
versions
with
other
meats
and
even
fish.
In
Turkey
shish
kebab
and
vegetables
are
usually
grilled
separately
on
different
skewers
and
served
together
with
pita
bread
or pilaf and of course tzatziki and other sauces.
