One day I picked her up from school when she was asking me to create a special spice rub named after her, that she could use as a personal gift for various occasions. Pork Ribs Zoe’s Style

preparation: 5 hours + overnight marinating Ingredients for 4 servings: 1 cup apple juice 4 tbsp apple cider vinegar 2 racks baby back pork ribs ½ cup barbecue sauce Zoe’s Spice Rub Utensils: oven, aluminum foil, plastic wrap, parchment paper, sheet pan, casserole dish Directions: Mix the apple juice with the vinegar in a casserole dish, wide enough to fit a rack of ribs. Dunk each rack into the dish, put the racks on a working surface and sprinkle with Zoe’s Spice Rub until covered on all sides. Massage the rub into the meat and wrap in plastic wrap. Let the racks marinate over night in the refrigerator, keep the juice-vinegar-mixture. The next day preheat the oven to 275 degrees Fahrenheit, unwrap the racks, let get to room temperature. Place the racks, bone ends down, on a sheet pan and bake for 1 ½ hours. Remove from the oven. Cut the racks in half and put, with the bone ends facing up, on four pieces of aluminum foil. Fold the edges of the foil up and divide the juice-vinegar-mixture between the racks. Fold the racks into tight packages, put back in the sheet pan and bake for another 1 ½ hours. Remove the sheet pan from the oven, unwrap the racks, discard juice and the foil. place racks back on the sheet pan and let dry out in the oven for 20 minutes. Brush the ribs with the BBQ-sauce on both sides, glaze in the oven for 30 minutes and serve hot with some white bread and a salad. Side Dishes: sweet potato, potato, white bread, salad
