a
spicy
spice
blend
originated
in
Ethiopian
and
Eritrean
cuisine.
Typical
ingredients
are
chili
powder,
ginger,
cinnamon,
garlic,
clove,
allspice
and
cilantro.
Berbere
sometimes
encompasses
herbs
and
spices
that
are
less
known
internationally.
Berbere
is
a
main
ingredient
in
the
Ethiopian
national
dish
Doro
Wot,
a
chicken stew.
Description
This is a spice rub that goes with every kind of meat. Use it as a rub for barbecuing or for smoking meats. The rub creates a sweet spicy crust.
Uses
Use this seasoning on beef, veal, lamb, pork, chicken, fish, shellfish. Use 1-2 tablespoons for 0.5 lb of meat.

Doro Wot (Ethiopian national dish)
preparation: 2 ½ hours
Ingredients for 4 servings:
26 oz chicken thighs
2 tbsp lemon juice
5 tbsp butter
2 tbsp olive oil
3 cups chopped onion
1 tbsp chopped garlic
1 tbsp chopped ginger
¼ cup Marc’s Berbere Spice Mix
½ cup white wine
1 tbsp honey
1 cup chicken stock
4 hard cooked eggs
Utensils:
large pot, knife
Directions:
Peel
the
eggs
and
prick
with
a
fork.
Cut
the
meat
into
bite-size
peaces.
In
a
bowl
mix
the
meat
with
the
lemon
juice
and
marinate
for
30
minutes.
Heat
2
tablespoons
of
butter
in
a
pot,
add
the
olive
oil
and
the
onion
and
cook
for
45
minutes,
covered.
Stir
occasionally.
Add
Ginger
and
Garlic
with
1
tablespoon
of
butter,
cover
the
pot
and cook for 30 more minutes. Add the meat, wine, stock and honey, cover and cook for 45 minutes, stir occasionally. Add the eggs and cook for 15 more minutes.
