Jerk cooking is popular in Carribean West Indian communities throughout America. Description This is a spicy and smoky seasoning packed with brown sugar, habanero chili, smoked paprika and allspice. Uses Use this seasoning on beef, veal, lamb, pork, chicken, fish, shellfish, vegetable. Jerk Chicken preparation: 30 min. + overnight marinating Ingredients for 4 servings: 1 whole chicken 1 oz soy sauce 1 oz lime juice 1 oz vegetable oil 2 oz white vinegar 1 oz orange juice Marc’s Jamaican Jerk Spice Mix Utensils: sharp knife, large bowl or resealable bag, barbecue grill or oven Directions: Cut the chicken into eight pieces and loosen the skin using your fingers. Combine soy sauce, lime juice, vegetable oil, vinegar, orange juice and 2 tbsp of Marc’s Jamaican Jerk Spice Mix and the chicken pieces in a bowl, marinate covered for a day in the refrigerator. Preheat a barbecue grill to medium high heat. Remove the chicken pieces from the marinade and grill for 10 minutes on each side until juices run clear when the meat is cut near the bone.
