Seasoned,
marinated
meat
is
cooked
on
a
vertical
rotisserie,
thin
slices
are
shaved
off
the
cooked
surface
as
it
continuously
rotates.
Shawarma
is
typically
served
in
a
flatbread
with
tahini,
tomato,
cucumber,
onion and salad leaves.
Description
This is a fresh, sour, smoky and flavourful seasoning that tastes of cumin, cardamom, sumac and cinnamon.

Chicken Shawarma
preparation: 20 min. + overnight marinating
Ingredients for 4 servings:
2 lb boneless, skinless chicken thighs
1 tbsp lemon juice
4 tbsp olive oil
Marc’s Shawarma Spice Mix
Utensils:
sharp knife, resealable bag, vertical rotisserie or barbecue grill
Directions:
Put
the
chicken
thighs
in
a
resealable
bag.
Sprinkle
with
3
tbsp
Marc’s
Shawarma
Spice
Mix,
massage
the
blend
into
the
meat,
add
lemon
juice
and
olive
oil
and
marinate in the refrigerator over night.
Take
the
bag
out
of
the
refrigerator
and
let
the
meat
come
to
room
temperature.
Preheat
the
oven
grill
to
medium
high.
Put
the
thighs
on
a
baking
tray
in
a
single
layer and grill for 18 minutes until done. Serve with sliced tomatoes, onion, diced cucumbers, tahini and flatbread.
