Shish Kebab preparation: 20 min. + 4 hours marinating Ingredients for 4 servings: 2 lb boneless leg of lamb 1 red bell pepper 1 green bell pepper 2 red onions 2 fl oz olive oil Marc’s Shish Kebab Spice Mix Utensils: sharp knife, medium bowl, barbecue grill Directions: Trim the meat and cut into 1 ¼ inch cubes. In a medium bowl mix 2 tablespoons of the spice mix with the olive oil. Add the meat cubes, stir well until the meat is covered with the marinade. Seal and let marinate for 4 hours. Peel and cut the onions into wedges. Cut the bell peppers in half, lengthwise. Discard the white membranes and seeds, cut the peppers into 1 ¼ inch squares. Thread the meat onto skewers, thread the vegetables onto separate skewers. Grill the skewers for 5 to 6 minutes, turning them frequently. Serve with pita bread and sauces of your choice.
